Ricotta and Pancetta Pasta Recipe

We are crazy about pancetta around here … and who can blame us? Everyone loves bacon! Add a bit of fresh ricotta and summer peas and this bacon pasta recipe just got kicked up a notch.

Ricotta and Bacon Pasta Recipe

Ingredients:
(Serves Two)

>> Half box of fusilli pasta
>> 2.5 ounces pancetta
>> 7 ounces fresh ricotta
>> 3 ounces frozen peas
>> Salt and Pepper

Directions:

1. Cook pasta al dente in salted water according to directions.

2. In a pan, cook the pancetta and peas.

3. In a separate bowl, add a few spoons of the boiling pasta water to the ricotta and stir to make a cream.

4. Add cooked pasta, pancetta and peas to the ricotta and toss with fresh black pepper.
